(for 12 people as an appetizer)
Ingredients:
3 tbsp. unsalted Butter
3 tbsp. brown sugar
½ tsp. white wine vinegar
2 large onions, diced
2 tbsp. vegetable oil, divided
8 large flour tortillas (9 inches)
1 lb. Gouda cheese, grated
Preparation:
Heat the butter in a frying pan over a medium flame. Add the sugar and vinegar and stir continuously until the sugar begins to dissolve. Add the onions and let them cook slowly for about 20 minutes, stirring continuously so they brown but don't burn.
In a separate frying pan, heat a tablespoon of the oil over a low flame. Place a tortilla in the pan, and once it is warm spread some cheese and caramelized onions over it. Fold the tortilla in half and continue to warm it in the pan until the cheese is melted. Flip the tortilla over with a spatula and brown the other side.
Once the tortilla is browned on both sides and the cheese is melted, remove it from the fire, cut it into sections and place on a serving platter. Repeat the process with the remaining seven tortillas. Serve warm.
