(for 12 people as an appetizer)
Ingredients:
1 ½ cups sour cream
1 tbsp. taco seasoning
1 can refried beans (16 onz)
11/2 cups guacamole
1 cup black olives, chopped
2 cups tomatoes, chopped
1 cup red onion, diced
2 cups Monterrey Jack cheese, grated
1 cup shallots, finely chopped
Preparation:
In a small bowl, mix the sour cream and the taco seasoning until completely blended and set aside. Empty the can of refried beans in a deep glass serving dish, measuring approximately 11" x 7". Add the guacamole, then the sour cream mixture, the chopped olives, the chopped tomatoes and the diced tomatoes and shallots progressively in layers. Top the dish with a layer of grated cheese, cover with plastic wrap and refrigerate until it is time to serve. Accompany this dish with Tortilla chips of your choice.
